Nothing says I love you…

…more than heart-shaped pomegranate pancakes with chocolate maple syrup! Right?!

This morning’s Valentine’s-appropriate hot pink sunrise made it hard to get out of bed early, but I did manage to sneak into the kitchen and create these yummy pancakes before my husband and children came down for breakfast! Every year I make a special breakfast just to make sure that I’m their very first valentine of the day. While these pancakes were a success, I admit that my family probably would have raved about cardboard (or just about anything else) with the chocolate maple syrup drizzled on it!

How did YOU eat clean and live well this Valentine’s Day?

Hi Kim, I’m glad you asked! I actually used a dry gluten-free pancake/baking mix and used pomegranate juice as my liquid. They came out fabulous, and were particularly quick and easy for a school day!

They sound delicious! Especially the chocolate maple syrup…..do you have a recipe for that?

HI Carrie, No recipe required. I put the desired amount of maple syrup on the burner and added powdered cocoa until it tasted yummy!
