World Vegetarian Awareness Month

Who even knew there was such a month?!

Whether you’re a vegetarian, vegan, flexitarian or just plain you (my preferred approach to “diet”), there’s no denying that it’s simply more fun to share the journey, which is exactly what I did this past Saturday at Brooklyn’s Grand Army Plaza (GAP) Greenmarket.

The truth is that nearly all of us can benefit from more non-animal sources of protein, more colors of the rainbow in our daily diets and, of course, more dark leafy greens. So to promote those ideals, we (me and my awesome clean team – Tony, Pam, Blanca & Allison) prepared and served 600 tastings of my Raw Kale Confetti Salad!

In just three hours we converted many non-believers into kale lovers, and proved just how easy and delicious it can be to go directly from farm to table. It was as easy as chopping up nearly 20 bunches of kale (all varieties) and tossing it with chopped onions, red peppers and carrots (all from local farmers). Add a drizzle of extra virgin olive oil, lemon juice, lime juice, grated fresh ginger and sea salt, massage everything into the leaves and voila! Instant yum!

    Oooh, I haven’t tried that recipe yet, but keep buying different varieties of Kale at the farmers market. I’ll have to try this one soon.
